We are going for plain and simple jam tart today. Plain and simple although there is a pastry part! I really wanted to try to perfect pastry and will be concentrating on that for a few Thursday’s. This week shortcrust. And tarts for the queen of hearts – must be as I’m a Valentine’s baby!!!!
- 6oz short crust pastry
- 6 tablespoons jam
To make short crust pastry:-
You will need
- 8oz self raising flour
- pinch salt
- 4oz butter
- 2 tablespoons water
Sieve the flour and salt into a mixing bowl.
Rub in the butter until the mixture is like fine crumbs.
Add the water gradually using a palette knife.
The mixture is the right consistency when it can be gathered into a ball leaving the bowl quite clean.
Do not use hard pressure.
Roll into a ball shape on a lightly floured surface. Then press down with fingers to form a disc shape. Wrap in cling film and refrigerate for 2-3 hours.
Put the pastry on to a lightly floured pastry board and roll to give it the required shape with a lightly floured rolling pin.
I then used pastry cutters to make individual tart shapes.
Add a teaspoon of jam to each tart.
I didn’t make my own jam yet, it’s on the list!
Put in the oven at 200 degrees. Bake for 20 minutes.
Serve with custard. Because I love custard (it’s on the list!!!!)
