Last week is, ‘so last week’.  This weeks baking segment on the blog concentrates on biscuits.  Today we will be making Mrs Beeton’s Lemon Biscuits.

What you Will Need:-


  • 635g / 22oz  plain flour
  • 340g / 12 oz castor sugar
  • 170 g / 6oz butter
  • 4 eggs
  • grated rind of a lemon
  • 2 dessert spoons lemon juice


Rub the butter into the flour

stir in the castor sugar and lemon peel and thoroughly mix.

Add the eggs (which should have been whisked already) and the lemon juice

Beat the mixture well for 1-2 minutes

Drop onto a buttered tin about 2 inches apart as the biscuits will spread when they get warm.  (I floured my working surface and rolled the mixture out so that I could use pastry cutters to create uniform biscuits).  Don’t make the biscuit too thick!

 Bake until they are a pale brown, about 15-20 minutes at 170 / gas mark 4.

Serve with a cup of tea!
