Last week is, ‘so last week’. This weeks baking segment on the blog concentrates on biscuits. Today we will be making Mrs Beeton’s Lemon Biscuits.
- 635g / 22oz plain flour
- 340g / 12 oz castor sugar
- 170 g / 6oz butter
- 4 eggs
- grated rind of a lemon
- 2 dessert spoons lemon juice
Method:-
Beat the mixture well for 1-2 minutes
Drop onto a buttered tin about 2 inches apart as the biscuits will spread when they get warm. (I floured my working surface and rolled the mixture out so that I could use pastry cutters to create uniform biscuits). Don’t make the biscuit too thick!
Bake until they are a pale brown, about 15-20 minutes at 170 / gas mark 4.
Serve with a cup of tea!
